I am a real oatmeal cookie monster... I just counted, and as of January 2018, I have shared 47 oatmeal cookie recipes along with you. Eep! Have you ever tried any of them yet? (? You'll find all my oatmeal cookie recipes right there!) They're a few of the most well-known recipes in my website because they taste very sweet and cozy, exactly like conventional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!
So you are going to begin with whole wheat bread (or gluten-free, if you prefer) and prompt oats (such as those... or these for a gluten free edition!) . Immediate oats are thinner and smaller than traditional rolled oats, and you are able to find them in canisters right alongside those classic oats at the grocery shop.
I probably seem like a broken record by now... But cause I ? you and want your cookies to flip out totally soft and chewy, I am reminding you again... Quantify your flour and oats properly, using this technique or a kitchen scale! (? That is the one I have and enjoy. A lot of either side will make your biscuits taste cakey or sterile, as opposed to chewy. This is particularly true of this oats--they act like little sponges and consume plenty of moisture from the cookie dough!
Ripe bananas- ideal for baking! Love all @amybakeshealthy's yummy & healthful banana recipes!
Watch these bananas? And all of those brown spots? When it comes to baking with bananas, brown = beautiful! I ? extra speckly bananas because they've a lot bright, bold flavor--along with additional natural sweetness! That's the minimum number of brown which I recommend. More is better!
The remaining portion of the cookie dough's sweetness comes from another natural ingredient... Pure maple syrup (such as that!) . You would like the kind that comes directly from maple trees, which is normally offered in thin glass bottles or squat, round plastic jugs. Skip the pancake syrup and sugar-free syrup!

The pancakes include much more natural sweetness! The recently purchased, additional plump, perfectly delicate ones are perfect... But click resources if you have old, somewhat dried out raisins (hmm... it sounds silly to describe dried fruit as dried outside! ) , that is okay!
Just add them into some microwave-safe bowl, and pour water on top till they're totally coated. Seal plastic wrap over the top, and microwave the bowl on high for 1 second. If you allow the peppers sit while mixing together the cookie dough, this little hint hydrates them they're exceptionally succulent --and that makes a major difference in these cookies once they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 biscuits
These oatmeal biscuits are soft, chewy, and full of banana flavor! The recognizable cozy spices and plump blueberries make them much more irresistible. They'll keep for a minumum of one week if stored in an airtight container in the refrigerator--should they last that long!
1 cup (100g) instant oats (fermented if required and measured like that )
3/4 cup (90g) whole wheat or gluten-free* flour (quantified like this)
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup (120mL) pure maple syrup
In a medium bowlwhisk together the oats, flour, baking powder, cinnamon, and salt. In another bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring only until incorporated. Fold in the raisins.
Preheat the oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.
With a spoon and spatula, dip the cookie dough into 15 curved scoops on the prepared sheet, and flatten to the desired depth and width using Vegan Chocolate Chip, Oatmeal, and Nut Cookies Recipe - Allrecipes ... a spatula. Bake at 325°F for 10-12 minutes.
Notes: It is extremely important to measure both the oats and flour properly employing this technique or a kitchen scale. (? That is the one I have and adore!) Too much of either could dry out of the biscuits and abandon them cakey rather than chewy.
Immediate oats are also referred to as quick-cooking or minute oats. They arrive in large canisters, just like conservative oats. They are not those at the small flavored loaf of bread. To make your own, add the same quantity of old-fashioned oats to your food processor, and pulse 10-12 times or until the oats will be approximately 1/4 to ? of the initial size.
For the gluten-free flour, I suggest the following mix: 1/2 cup (60g) millet flour, 2 tbsp (15g) tapioca flour, two tbsp (15g) brown rice flour, as well as 1/2 teaspoon xanthan gum. Most store-bought gluten-free flour blends (such as that one!) Will also work, if measured like this.
If your raisins are old, dryer, and not very plump or succulent... Add them into a microwave-safe bowl, and pour water at the top till they're completely coated. Seal plastic wrap over the top, and microwave the bowl on high for 1 second. If you let the raisins sit mixing together the cookie dough, then this small hint hydrates them so they're really soft and juicy!
